Cats know that humans are not cats. While cats may not understand human language and complex thought processes, they can distinguish between different species through observation and experience. Cats can generally recognize humans and other animals, including dogs, birds, and even other cats; they can differentiate between them.

When cats interact with humans, they perceive human characteristics through appearance, scent, voice, and behavior. While cats may not possess the complex cognition and emotions of humans, they are indeed able to perceive differences between species and know that humans are not of their kind.
Therefore, although cats may develop a sense of closeness to humans and regard them as companions or owners, they still know that humans are not cats.
